1. Understanding the gluten problem

Gluten proteins – mainly present in wheat, barley and rye – contain certain peptides that are difficult for humans to digest.


In sensitive individuals, these peptides cause inflammation leading to unpleasant symptoms such as bloating and abdominal discomfort. For people with celiac disease, they cause immune reactions with more severe symptoms and long-term complications.
